3 Easy One Pan Dinners

As deep as my love is for cooking, I need some quick and easy meals during the work week! As a foodie to the core, I refuse to sacrifice on the flavor of the dish. I’m not going to re-heat some boring bland pre-made dish and call it dinner. This inward battle of my love of food and my love of easy weeknights is constant and annoying! Therefore, I bring you my solution: Easy one-pan dinners! They are bursting with flavor and can be cooked in 10-15 minutes, so I’m one happy gal! 

3 Easy One-Pan Dinners:

  • Lentil & Vegetable Curry: Simply saute veggies of choice in 1 tablespoon of coconut oil until soft, season with curry powder, salt, pepper, and chili powder. Add cooked lentils and heat for 5 minutes. Serve over jasmine rice and top with optional cilantro.

Lentil Curry

  • Vegetable Pasta: Cook pasta according to packaging, drain, and set aside. Saute vegetables of choice until soft (about 8 minutes). Add cooked pasta and pasta sauce of choice to pan, heat 5 minutes or until sauce is bubbling. Top with nutritional yeast and cracked pepper.

Keeping it simple lunch

  • Asian Style Rice Bowl: Cook rice according to packaging (I recommend making a large batch of rice so you have cooked rice on hand for the week) and set aside. Saute vegetables of choice until soft, add in tofu cubes, 1/4 Tamari, and fresh garlic. Saute on high heat for 5 minutes until tofu has browned. Top with Korean BBQ sauce, hot sauce, or eat it plain! 

Keeping it simple dinner

These one-pan meals will be easy on the wallet and easy on your sanity during busy weeks! Not only can you throw everything together in 10-15 minutes, but you will have minimal clean up too!   1. I love making burrito bowls! I just heat up some cauliflower rice, add in onions and peppers, mix in beans and meatless crumbles and serve with cilantro and guac. So easy and amazing! (better than chipotle imo too!)

  2. I loveeeee one pan dinners! Let’s be real though – who doesn’t?! My go-to is always stir-fry. It’s just so easy to toss together some vegetables with a protein and a tasty sauce!! 🙂

  3. oh yum!!! I made an appetizer the other day with lentils and realized I need to use them more! They are so good and good for you, yet they are often overlooked.
