As deep as my love is for cooking, I need some quick and easy meals during the work week! As a foodie to the core, I refuse to sacrifice on the flavor of the dish. I’m not going to re-heat some boring bland pre-made dish and call it dinner. This inward battle of my love of food and my love of easy weeknights is constant and annoying! Therefore, I bring you my solution: Easy one-pan dinners! They are bursting with flavor and can be cooked in 10-15 minutes, so I’m one happy gal!
3 Easy One-Pan Dinners:
- Lentil & Vegetable Curry: Simply saute veggies of choice in 1 tablespoon of coconut oil until soft, season with curry powder, salt, pepper, and chili powder. Add cooked lentils and heat for 5 minutes. Serve over jasmine rice and top with optional cilantro.
- Vegetable Pasta: Cook pasta according to packaging, drain, and set aside. Saute vegetables of choice until soft (about 8 minutes). Add cooked pasta and pasta sauce of choice to pan, heat 5 minutes or until sauce is bubbling. Top with nutritional yeast and cracked pepper.
- Asian Style Rice Bowl: Cook rice according to packaging (I recommend making a large batch of rice so you have cooked rice on hand for the week) and set aside. Saute vegetables of choice until soft, add in tofu cubes, 1/4 Tamari, and fresh garlic. Saute on high heat for 5 minutes until tofu has browned. Top with Korean BBQ sauce, hot sauce, or eat it plain!
These one-pan meals will be easy on the wallet and easy on your sanity during busy weeks! Not only can you throw everything together in 10-15 minutes, but you will have minimal clean up too!
