3 Gluten Free/Vegan Meal Ideas

Happy Tuesday! Today I’m popping in to share 3 quick, easy, delicious gluten free and vegan meal ideas. These recipe ideas are all very comforting and satisfying. They are my go-to plant-based comfort food meals. I hope these ideas inspire you to try out some different meals this week!

3 GF/Vegan Meals:

Veggie Pasta

Brown Rice Pasta/Beefless Crumbles/Spinach/mushrooms/onions/eggplant/tomato basil sauce/nutritional yeast

  • Cook pasta according to package. Saute the veggies until soft, add in crumbles, cook 5 minutes, add cooked pasta and sauce heat until boiling. Sprinkle with nutritional yeast.

“Tuna” Sandwich

Chickpea “Tuna” sandwich/potato wedges/broccoli

  • Find chickpea “tuna” recipe here! 
  • Cut potatoes in to wedges, add 1 teaspoon olive oil, 1 tsp garlic powder, 1 tsp onion powder, & 1 tsp Old Bay seasoning. Cook in 425 degree oven for 30 min flipping over half way. 
  • Steam broccoli and add in dill weed, parsley, and garlic powder

Veggie Dogs & Mac and “Cheese”

Veggie Dogs/Mac and “cheese”/spinach/diced tomatoes/peas

  • Cook vegan mac and cheese according to package. Add veggies and heat through. Top with garlic powder, cracked pepper, and Gluten Free Panko breadcrumbs

  1. I have been wanting to try the chick pea “tuna” salad! It looks really good! We try to go meatless a few times per week. I also try to go vegan 1-2 times per week too! These dishes look amazing! My favorite meatless dish is probably eggplant “meat”balls. They are so filling and super yummy!

    • I loved the chickpea “tuna” salad even more than I thought I was going to. That recipe that I shared is really flavorful and delicious! Oh wow eggplant “meat”balls sounds really good. Do you have a certain recipe you use?

  2. Actually one of my favorite meatless meals is veggie soup or meatless chili! But these look so good too; I really want to do the chickpea tuna salad. I’ve seen it 2 places now! I also love doing pesto pasta without meat!

    • You should definitely give the chickpea salad a try it’s really yummy! I love a hearty meatless chili too–with fall coming up I’m looking forward to making some in my slow cooker!

    • That sounds really yummy!! Do you put a sauce on the lettuce wraps? I had a really amazing dipping sauce at a vegan restaurant and i want to recreate it! It was apricot and peanut and so delicious!!!

    • Thank you! Veggie chili is perfect for fall weather–I’m looking forward to making more soups and stews as the weather gets cooler.

  3. These all look delicious! I’m not a huge meat eater, so I like meatless meals. ( My husband can never understand when I don’t order meat!) That first one looks really good and I will definitely try it! It looks like it would be an easy make ahead lunch.

    • Yes, the picture I took was actually of a reheated version of the recipe from the night before. I love taking it to reheat for lunch at work. So yummy!
