4 Year Anniversary

Happy Monday! I hope that everyone had a good weekend! I’m currently writing this on Saturday morning and we’re getting a little bit of snow. It may look pretty, but I’m feeling the itch for warm summer already 🙁 I wasn’t made for this Winter stuff! Thursday was my 4 year wedding anniversary and we decided to keep things simple since it was a work night. Here’s a quick look at our yummy dinner! 

4 Year Anniversary

We decided to walk to a local Japanese Hibachi/Sushi restuarant near us that we really enjoy. We started out with some miso soup which is always perfect on a cold Winter’s night! Miso is the best! 

We also shared an order of edamame. I love how much protein is in edamame…plus it’s salty and delicious! 

For my main meal, I went for a Vegetable Futo Maki roll (Lettuce, tomato, cucumber, Japanese squash, avocado, & shiitake) & the Vegetable Maki (asparagus, avocado, cucumber, & carrot). 

We enjoyed dessert at home because I found A CHEESECAKE THAT I CAN EAT! I came across Daiya’s New York “Cheezecake” which is 100% vegan and 100% gluten free! They use a coconut base for the cheese and it was pretty delicious! All you have to do is thaw the frozen cheesecake in the fridge for 4-6 hours! (I took it out of the freezer before work in the morning.) 

We topped the cheesecake with some chocolate syrup and had some hot chocolate topped with coconut whip and cinnamon! It was the perfect simple way to celebrate our 4 year’s married. Expecting our first baby has made me really feel extra thankful for Daniel in so many ways. I feel so lucky to have found such a loving, caring, wonderful man that will be the best dad I could have asked for for our child. <3

  1. Sounds like you had a wonderful anniversary, Heather!! 🙂 My favorite sushi roll is one with salmon inside and mango on top, gosh I can’t remember what it’s called! I’m more of a low-key celebration girl, but I do love big celebrations every now and then. 🙂

    • Mango and salmon sounds delicious! Same here small gatherings are my favorite but a big one every so often is still fun!

    Today is actually our 6 month anniversary, and we’ll be celebrating by watching the national championship game, ha!

    I’m all for more intimate celebrations, except for big ones. 30th birthdays, 5 year anniversaries, those types of things. But more intimate celebrations otherwise tend to make those big parties even more special. 🙂

  3. I was craving sushi so bad last week and nowwwwwwww it is uncontainable. Ugh it looks sooo gooooood.

    • You should get some—once the craving hits its hard to forget it! Isn’t that cheesecake exciting?! Thank you!! I was definitely more excited for the baby than the cheesecake, but the cheesecake was a close second. hahahaha! 😀

    • The cheesecake was pretty good! It definitely needed the chocolate syrup though–or it’d be delicious to add fruit on top too!

  4. Happy anniversary, Heather! <3 Sounds like a really nice way to celebrate–it's always nice to have a nice place to eat within walking distance. And having a cheesecake you can eat is awesome, too. I'll have to check it out to see if it might be something that wouldn't bother my tummy, too.

  5. HAPPY FOUR YEAR ANNIVERSARY!!!!!! Oh my lanta- that cheezecake looks yumazing! I have a tofu cheesecake recipe ( I know sounds kinda strange) that I was addicted to all last year. I am planning on sharing the recipe eventually, but you know how it goes hahah. So glad you guys had a great celebration- you know that sushi was making my mouth water like crazy! xoxo
