5 Budget Friendly Meals

I think we could all agree that saving money is a good thing! It can seem impossible to come up with healthy recipes while saving money. But, I’ve come to realize with a few tweaks and a willingness to learn, putting together a healthy meal is also very budget friendly! Here are some of my favorite budget friendly meals!

Veggie Stir Fry:

It’s no secret now that I am a huge stir fry fan! I love that it can feed a crowd, be packed with veggies, and still be wallet friendly. Try combining some fresh vegetables with canned or frozen to make the budget stretch even more. I love to use fresh bell pepper and onion, and add in some no salt added peas and corn. 

Tortilla Pizzas:

Using a tortilla as your base, load it up as you would any pizza for a quick and healthy pizza alternative. I usually serve mine with a vegetable or salad. Current favorite side veggie is steamed broccoli with garlic powder, salt, and pepper! 

Roasted Veggie Pasta:

Buy some in-season produce and add olive oil and your favorite seasonings. Roast in the oven until tender and add to some of your favorite cooked pasta and sauce. This always makes for great lunches and dinner leftovers too! 

Burrito Bowls:

Again, I’d urge you to use a combo of fresh and frozen or canned produce on this one. I love to buy canned Mexican corn, canned diced chilies, and use some fresh spinach, mushrooms, and onions. Add in some beans, rice, and salsa and you’ve got a quick and hearty meal! 

Egg Cups:

This one is a winner for breakfast, lunch, or dinner! Whisk eggs and season with salt and pepper. Add sauteed veggies of your choice to a muffin tin and then pour egg over top. Bake in the oven for 15-20 minutes at 350 degrees until the egg sets. I usually have mine with some roasted potatoes  and top it off with some salsa!

  1. Veggies veggies veggies. In general, veggies are the least expensive thing, and canned or frozen are just as good! Or beans. Cans of beans can get you a lonnnggg way. I think making a big thing of chili for the week is one of my favorite ways to know I’ve been frugal.

    • Sure, I bet it does! I feel the same with the GF dairy free stuff too. It can be difficult to keep the bills low! Roasted veggie pasta has become one of my weekly rotation favorites!
