7 Gluten Free/ Vegetarian Breakfasts

Hello, friends! It’s good to be back in the inter-web world! I did enjoy the blogging break and loved that in the evenings I could watch a movie or relax, but I do love blogging and missed you all last week! I had a really amazing baby shower this weekend and I’ll definitely do a recap on it this week! I’m someone who typically eats the same breakfast during the workweek on repeat to make things simple and easy. One week I decided to challenge myself to a different breakfast each day so that you all can have some simple gluten free and vegetarian breakfast ideas! I say vegetarian because honey is used but you could swap agave or maple syrup for completely vegan.

6 Gluten Free/ Vegetarian Breakfasts:

Peanut Butter Oatmeal: 

Quick oats, cooked in cashew milk, with vanilla extract and peanut butter melted on top.

Strawberry Toast:

 Vegan cream cheese (Go Veggie brand is my favorite) with strawberries and honey drizzled on top two pieces of cinnamon raisin bread. Extra strawberries on the side.

Coconut Yogurt Parfait & Toast: 

So Delicious Coconut yogurt, Blueberry hemp granola, and strawberries. Side of cinnamon raisin toast with vegan butter. 

GF Waffles: 

Gluten free blueberry waffles with vegan butter and blueberry maple syrup. 

Green Smoothie & Toast: 

Two pieces of  cinnamon raisin toast. Smoothie with spinach, kale, strawberries, banana, and cashew milk.

PB&J Sweet Potato: 

Baked sweet potato topped with peanut butter and jelly and a sprinkle of cinnamon. 

Baked Oatmeal: 

Old reliable staple of pumpkin dark chocolate chip baked oatmeal topped with peanut butter!

  1. Different breakfast most days for me. I never like to have the same thing twice in a row for some strange reason. I never thought of drizzling honey on strawberry/cream cheese toast – YUM! Annnnd now I want a pb&j sweet potato.

  2. I eat the same breakfast every single morning! I’m super rushed, so I don’t have time to get creative or make decisions. I have 3 hard boiled eggs with peanut butter. It’s the best combo ever- hah! I sure do love waffles though and sweet potato and pb is a killer combo!

  3. Blogging breaks can definitely be needed – I’m currently on a temporary Instagram break. Especially helpful in busy periods of our lives.

    But we’re glad you’re back! These breakfasts look delicious. And I’m slightly ashamed to say that I’ve never made baked oatmeal. Eek! I’ll definitely be giving that a shot!

  4. I love your taste in breakfasts; it really appeals to my love for peanut butter and anything sweet. 🙂 I’ve never had a sweet potato for breakfast, but oatmeal is such a good one with lots of peanut butter and honey or maple syrup.

    • Thanks you, Emily! I haven’t tried the quinoa for breakfast thing yet but I love oats so much there’s not reason I wouldn’t love quinoa!
