  • Currently Cooking: Tacos! I love how versatile tacos are. I switch the protein I’m using and switch up the toppings. They’re quick and easy on the weeknights and I love serving them up with some Mexican style rice or some chips and guacamole! 


  • Currently Anticipating: Memorial Day weekend! I don’t think I have specific plans, but I’m looking forward to extra time at home and a long weekend off from work!
  • Currently Listening to: YouTube What I Ate In a Day videos. I love watching these for recipe inspiration or to learn about gluten free products I’ve never heard of. They often give me some ideas for things I can make and adjust to my own liking! 
  • Currently Craving: Justin’s Dark Chocolate Peanut Butter Cups. They’re so good! I am hoping in the next few weeks I find a good recipe to make my own peanut butter cups so I can have them on hand. I have a bunch of vegan peanut butter cup recipes just waiting for me! 
  • Currently Drinking: Smoothies! Now that the weather’s starting to warm up some, I’ve been craving fruit smoothies. Current favorite combo is 1 cup of almond milk, 1/2 frozen banana, 1 scoop Vega chocolate protein powder, 3-4 strawberries.


  • Currently Indulging In: Udi’s Gluten Free Muffins. I used to love getting muffins every once in a while for a treat, and was pretty sad about giving them up. These muffins are really good heated up in the oven for about 10 minutes. I keep them in the freezer.

  • Currently Avoiding: Making dinner–I don’t feel like getting off the couch 😀 I’m making Stir Fry tonight!

  • Currently Needing: A day off. Hence my excitement for Memorial Day weekend!

  • Currently Loving: Feeling the fresh air come through the windows on a warm afternoon. 
  • Currently Watching: Chopped Netflix Collection. I rediscovered my love for this show a few weeks ago and have been enjoying watching the Netflix episodes. I only have a few more left!

  1. I love how versatile tacos are too. so delicious! I am currently loving the show on ABC called The Catch. I can’t wait for Memorial Day Weekend either! We have a big family reunion planned with my husband’s family so it will be fun!

  2. I’m all about smoothies with the warmer weather! Having an extra day off for the weekend does so much for my mental health, so I agree with you! I haven’t listed to what I ate in a day youtube videos…interesting!

    • Agreed! Yeah, those Youtube videos are hit or miss. You either get people clearly not eating enough…but I like some of them. Its always nice to get ideas for meals!

  3. I’m jealous you still have a few episodes left! I go through those things too fast. Right now we are watching Kid’s Baking Championship. which is pretty fun!
    An extra day off is definitely so nice. It’s like weekend recovery!

    • I saw that one was on there too but I’ve never watched that one! I saw they just added Guy’s Grocery Games…so excited!

  4. We’ve been on a taco and nacho kick lately, too! Thus why I had a healthy nacho alternative on the blog yesterday, ha!

    Lately, I’ve been indulging in the show “Veep” – it’s absolutely hilarious, and SMART, which I love! I always saw the start of the show after Game of Thrones and decided to start watching it on Monday. I think we’ve almost finished the whole first season, ugh! This coming from the girl that hates lounging on the couch all day, ha!

  7. I love that you don’t really have plans for the long weekend – especially with your current “need.” We can so habitually just fill our holidays or days off with plans, when what we really need is just to CHILL and see where the day takes us.
    For some reason i get intimidated to make tacos – I’m going to trust your word that they actually aren’t as labour intensive as I think.

    • I know, I try not to glorify “busy” and actually allow myself breaks.
      Really?! I’m thinking of doing like 3-5 taco recipes in a post…they’d all be really simple so maybe I should now that you’re saying this!

  8. Fruit smoothies have been really hitting the spot for me too lately, woohoo for warmer weather and wanting to eat more fruits! I am looking forward to get this Monday off too, it’s announcing so hot so hopefully I get to enjoy my day outdoors.
    Currently watching/ finished watching last night : Brooklyn nine nine on netflix. That show is so good, but I longer have any seasons to watch :'(!

    • I haven’t seen that show before! I’ll have to check it out! I hate when you finish a show you love and you have to find a new show.

      I wish it could always be warm and that fruit would always be overflowing haha! Maybe I need to move down south? 🙂
