Cooking: Rice bowls! I’ve been loving these for a simple weeknight dinner. My favorite combo is black beans, corn, green onion, diced tomatoes, mixed greens, salsa, and guacamole all over a bed of rice!

Anticipating: Pumpkin season. I know, I know… cue the eye rolling! I am looking forward to trying different pumpkin flavored things and coffees this Fall. 

Craving: Peanut Butter everything. I have always loved peanut butter but I seriously can’t go one day without having a little bit of peanut butter! If you love peanut butter as much as me, check out my Peanut Butter & Jelly Bar recipe! They’re vegan, gluten free, and delicious!

Drinking: Green smoothies! I’ve been enjoying my Nutribullet and making smoothies a few times a week for breakfast. I love that they have a 32 oz cup because if I’m going to drink a meal, I need it to be substantial!

Indulging In: Still enjoying dairy free ice creams on the regular. I don’t crave or want ice cream when the weather gets colder, so I’m enjoying all I can while it’s warm out! Current favorite is chocolate peanut butter swirl which I then drizzle with more peanut butter. See above for currently craving….haha!

Needing: Neck/back relief! I’ve been having a lot of neck and upper back pain for the past few weeks so I went to a medical massage therapist. They said I was very swollen and tight and that I’ve overworked already tired muscles. I had a 60 minute session this weekend, and I will go once a week for the next month and see how I feel. I’ll keep you updated!

Loving: Reading! As I mentioned in my August Goals I wanted to end the day reading rather than staring at my phone. I’ve really been loving winding down with a book and have already read three books in a month! 

Watching: I loved Stranger Things and whipped through it in no time! I definitely recommend it for any Netflix people out there! I’m also making my way through House Hunters and Giada at Home.

  1. Our food preferences are right in sync. I love Mexican rice bowls for dinner, and I usually don’t go a day without having a little peanut butter. So Delicious coconut milk ice cream is my favorite. It’s so creamy and satisfying.

    So sorry about the neck pain…I honestly think that’s one of the worse places to have muscle pain (lower back pain is pretty nasty as well) because it affects your whole body, ya know? My whole body suffers, not just the affected area, when I have back pain. Prayers that it subsides quickly!

    I love your reading goal. Reading before bed is such a wonderful way to unwind, and I don’t do it enough!

    • Thanks, Evangeline! Im feeling a little better after my first appointment so I’m hoping the deep tissue massage and stretching helps!

  2. I’m consciously trying to get in as much ice cream as I can right now because I know I will just not want it – even though its still delicious – when the weather gets cooler. And no eye rolling here, we all know the pumpkin spice is coming. I just started a pinterest board. Aha.
    Sure hope you can work out those neck and back kinks. That is NOT fun and can really affect your mood and energy, too.

  3. Rice bowls are SO pretty because they have so many different varieties of toppings; I love that you and Kat both did different varieties of PB&J bars. I would love to try both this week. 🙂 I’m a peanut butter gal too. And NutriBullets are so cool; it would be neat to just make one smoothie serving in them.

  4. I’m so jealous that you’re getting to read! I’ve had to take some time off of reading due to school starting up again–at least, I’m sure I’ll be reading, but I won’t get to choose what I read. Any good recommendations for winter break?

    • Same here! The only thing that annoys me is when she breaks in to a highly forced Italian accent when she says the name of Italian cheeses, pastas, or breads…it makes me roll my eyes!

  5. I love rice bowls! My family has one that they make on special occasions. The ingredients sound weird, but it really works! We use rice, ground meat (they like hamburger, I like ground turkey), cheese, avocado, crushed tortilla chips, olives (not for me), tomatoes, salsa, sour cream, lettuce, onion, and coconut. The coconut is the weirdest ingredient, but it tastes amazing! It gives you that sweet and salty taste. I actually like making these with chicken or black beans and corn.

    • That sounds great! I like to saute veggies for the burrito bowl in coconut oil so im sure it would be a similar idea! That sounds great! I’d love it with black beans or tofu!
