Hello everyone 🙂 I hope you had a great weekend and that your Monday is off to a good start! I had a relaxing but fun weekend with family so I thought I’d do a bit of a recap post today.
Daniel and I met up with our friend for dinner on Friday which was awesome because we hadn’t seen her for a long time! I always love the friends that you can go a long time without seeing but pick up right where you left off. I think that shows a real friendship.
We went out to a local favorite sushi spot; it has hibachi style dinners and sushi. We split an order of edamame for an appetizer and decided on sushi for dinner. I ordered a smoked salmon roll and a Kampyo roll. I hadn’t ever tried Kompyo before, which is a pickled Japanese squash, and it was really delicious! We went back to our apartment to hang out and continue catching up.
I started Saturday off on a relaxing lazy note. I reheated leftover sweet potato fries and made a veggie egg scramble to go alongside of it. I also enjoyed one of my Chocolate Berry Dessert Oats with my coffee!
After lounging for a while, I got dressed and ready to go and my sister picked me up for a fun sister day with my niece.
We hit a couple of stores and then went back to her house to hang out. She bought these gluten free hamburger rolls and cooked up some burgers and sweet potato fries for lunch. The rolls are really dense but really good. It’s the same brand as my favorite loaf of bread that I’ve been buying.
Once my brother in law came home from work, he watched my niece so my sister and I could hit Target and browse without rushing. I got a couple of snacks and other things I needed. A big round of applause for Target and all of their Gluten free options! I don’t think Target has ever done me wrong. <3
After a rousing viewing of Beauty and the Beast, (my niece is obsessed with this movie) we played in her tent (that I gave her for Christmas) and then I went back home.
For Saturday’s dinner, I stir-fried all of the random leftover veggies I had and added in a mahi mahi burger for an 8:30 pm dinner. It turned out very good for a last minute meal!
Daniel offered to make us breakfast on Sunday morning which I gladly accepted. We each had a GF waffle, another dessert oat cup, and an egg. We went to church and then did some errands before coming back home. The rest of Sunday was some food prepping, blogging, and making my weekly workout play list.
This week’s menu:
- Monday: Vegetable and potato curry
- Tuesday: Coconut French toast bake and chicken sausage
- Wednesday: Chicken sausage stir fry
- Thursday: Shrimp tacos
- Friday: Pizza (GF of course!) & soup
We ended the day with a dinner at Qdoba because we had a buy one get one coupon that expired Sunday! This location just opened up and is within walking distance to our apartment. They also have a full service bar and outdoor seating. I have a feeling this won’t be our last time going there…with or without a coupon! I got the “Bohemian Veg” corn tacos…ate all three of these right up! I think tacos taste better when someone else makes them for you…anyone agree?
