Family Time, Car Struggles, & Mother’s Day Eats

Hello everyone I hope that you all had a great weekend and a great Mother’s day! I worked a half day on Friday and had lunch with my sister, niece, cousin and her baby at my cousin’s house. Does anyone else out there love a good lunch special? Nothing is better than an affordable combo meal…especially if it’s sushi! I got the two roll lunch special with salmon avocado roll, a spicy tuna roll, and a miso soup which also was included. It was delicious and the miso soup was perfect for the dreary, chilly, rainy day we were having.We played with the babies, laughed, talked, took pictures, and had coffee. It was a lovely time together…even though it was bad weather! 

Cousins

I slept over my sister’s Friday and spent Saturday with my niece playing, running around, watching Snow White…or “Heigh Ho” as she calls it, and soaking up all of the time I had with her.

My husband and I stopped at the grocery store on the way back to our apartment and when we went to start up the car, (with all of the week’s groceries in the trunk) the battery was dead. 

After receiving zero help from any shoppers and zero help from the customer service desk, we called my father in law who is about 20 minutes away, for an emergency jump. Luckily he was home and came right away. Once we got it jumped, Daniel dropped me off at home with the food and went to go get the new battery.

By the time all was said and done it was 8:45, I was hungry and didn’t have dinner yet, and was just plain grumpy and exhausted. I opened the apartment door and saw that my husband and shampooed all of the rugs, dusted, and cleaned our whole apartment while I was gone at my sister’s house.

I teared up at that huge gesture of love especially knowing that at that very moment, he was out taking care of the battery situation. It’s the little moments like that, that remind me that I am lucky to have such a great guy in my life. I am happy to say, the car now has a new battery and all is fine now. Also, none of the food spoiled from being in the car a little longer than normal. 

Sunday, I had my mom over for Mother’s Day lunch and I made a new recipe, which I think I’ll eventually share on this blog because it turned out really well. I didn’t do any measurements though, so I’ll have to pay more attention next time. I made a chicken taco pasta bake with brownies for dessert. All gluten free of course!

I bought my mom tickets to see a Broadway show coming to the city next month, so I can’t wait to take her! She was really excited! 

This week’s eats:

  • Monday: Korean-style rice bowls with seaweed, kimchi, and chicken
  • Tuesday: Fish tacos and chips and guacamole
  • Wednesday: Chicken Stir Fry
  • Thursday: Oat Pancakes & Fruit and yogurt parfaits 
  • Friday: Out to Dinner with some friends

Last week, I was all over the place with my workouts due to some knee pain and pure laziness. I’m hoping to jump right back in to my usual work out routine this week! Remember, if you fall off your game, don’t beat yourself up, just get right back in to it!

    And that does sound like you have a stud of a dude on your hands there. Ray is wonderful, but definitely no dusting, ha! What he lacks in home cleaning, he makes up for in sense of humor and charm. I’ll take what I can get. Haha!

    • I know i was really surprised! I was happy my husband was with me and not alone as I usually go to the grocery store alone!

  3. That picture of Lily sleeping on you is too adorable!! And how sweet of Daniel, he definitely is a stud:)
    My favorite sushi roll is either Rainbow or salmon & avocado, though I have to wait until August to fully enjoy them again:) Sushi will be one of the first things I eat once the baby is born!
    We celebrated Mother’s Day last week with my family when my sister Christina was in town from California, so on the actual day it was pretty low-key. The hubby took DJ to the park so I could enjoy some alone time, and then we had my parents over for dinner and grilled out.

    • You should have someone bring you a sushi platter while youre in the hospital! 🙂 So great that you got some alone time!

  4. What a wonderful husband you have! I’m sorry about the frustration of the car battery issue and nobody jumping in to help, though.

    • I know–you’d think one person would have been able to! It was high-shopping time since it was Saturday! It’s not like we were there with three shoppers at a random late hour at night!

  5. Vehicle issues are the WORST! And always come at the worst times! Your menu looks a-mazing. I spent mothers day enjoying breakfast in bed and lounging around while the hubs took our little man outside and did most of the ‘parent’ work. It was glorious!
