Happy Friday! With Memorial weekend, this work week flew by for me! I’ve got some fun plans for tomorrow with one of my sisters and my cousin in the city–more on that later! Sunday I hope to relax at home, food prep, and do some blog work! Today’s Coconut Mocha Shake is simple, easy, and refreshing. Use it in the morning instead of your usual coffee or perhaps for a sweet treat to end the night. It’s vegan, gluten free, and has a kick of caffeine to jump start your morning.
Coconut Mocha Shake
- 8 oz brewed and cooled coffee
- Half a small frozen banana
- 1 teaspoon coconut oil
- 1 scoop of chocolate protein powder or 1 tablespoon of cocoa powder
- Shredded coconut (optional topper)
- Place all ingredients in a blender and blend until smooth
- Pour in to glass, top with coconut, add straw, & Enjoy!
I used Vega protein powder for this recipe. It’s vegan and gluten free and doesn’t have as much of a chalky taste that some protein powders have. I wanted to add the protein powder to help keep me full and more satisfied because I’m ALWAYS hungry!
