Foodie Friday: Coconut Watermelon Slushie (Vegan+GF)

Happy Friday, everyone! If you’re reading this right now, it means I’m off to the beach for the weekend with my husband and some of his family members. I will be enjoying a long weekend with them and I’m excited to unplug, relax, and do some beach reading. Today’s Coconut Watermelon Slushie is creamy, gluten free, and 100% vegan. I hope you make it and sip on it during your 4th of July BBQ’s! This slushie is naturally sweetened with Medjool Dates with no added sugars so go on and sip it from a large glass;it’s so refreshing! 

To be honest with you, I was hoping this would be more of an ice cream texture, but I think because of the coconut milk/watermelon ratio, it turned out to be more of a slushie. No matter what you call it, the flavor is on point! Without further ado, lets get in to this deliciousness!

Coconut Watermelon Slushie (Serves 4)


Coconut Watermelon Slushie Ing

  • 2 Cups cubed watermelon
  • 1 can Coconut Milk (unsweetened)
  • Juice of 1/2 Lime
  • 4 Pitted Medjool Dates
  • 1 teaspoon of Cinnamon


  • Add watermelon and coconut milk in to blender. Blend a few seconds until watermelon breaks up.
  • Add remaining ingredients and blend until smooth

Coconut Watermelon Slushie Blend

  • Place in to jar and freeze 30 minutes or until mixture has frozen partially but is not completely frozen solid.

Coconut Watermelon Served

  • Enjoy!

  1. This sounds very refreshing! Do they dates make it that color?? I actually just tried a Watermelon Moscato last night and it was so good! Not as sweet as I thought it would be (which was good because I don’t like drinks that are too sweet) and it was even a little bubbly!

    • That sounds good! I’d love to try that too! Yes, the dates and the cinnamon made it this color. It wasnt quite the bright pink i was hoping for but it really tastes delicious!

Favorite drink I guess still has to be coffee, even though I don’t need it at 4: 00 AM like I did back in the ol’ Postal Days And the absolute best way to eat watermelon is outside, so we can find out who can roll their tongue( I just spelled ” TOUNGE” about 12 different ways) and spit the seeds the farthest!!!
