Foodie Friday: Peanut Butter & Jelly Bars (V+GF)

If you have been reading this blog for any amount of time, you may have guessed that I have a serious love for peanut butter. I have peanut butter basically every single day and I never get sick of it. Sometimes while I’m eating the peanut butter, I wonder how it could possibly be so delicious..like seriously..how is it so delicious?! Today I’m sharing  a simple and delicious take on classic Peanut butter & Jelly. This version is vegan and gluten free and perfect for a snack or dessert. I hope you enjoy them as much as me…please try not to eat them in one sitting! But, if you do, I won’t judge you! 

Peanut Butter & Jelly Bars (V+GF)

Crust Ingredients:

Peanut Butter & Jelly Bars Ing

  • 1/2 Cup GF Quick Oats
  • 1/3 Cup Coconut Oil
  • 1/2 Teaspoon salt
  • 1 Teaspoon cinnamon
  • 3 Tablespoons Maple Syrup
  • 2/3 Cup Coconut Flour

Directions:

  • Preheat the oven to 350 Degrees & line baking sheet with parchment paper
  • Add crust ingredients to a mixing bowl and combine with hands
  • Pat down mixture in small baking pan

Peanut Butter & Jelly Crust

  • Bake 10 minutes until crust is golden brown
  • Allow to cool 10 minutes

Topping Ingredients:

Peanut Butter & Jelly Bars Topping

  • 1/2 Cup Peanut Butter (Drippy works best!)
  • 1/3 Cup Jam of choice (I used blueberry)

Directions:

  • Spread peanut butter over top of the crust. Be careful not to break up the crust while spreading
  • Add jam of choice (I used blueberry) and spread over the peanut butter
  • Place in freezer and freeze for at least 30 minutes
  • Remove from freezer and cut in to bars

  1. You recipe genius you. This looks heavenly! I love that it uses coconut flour because I have a bag of it hanging out in my cabinet, but I never know what to use it in. I might actually make these today…

    I don’t know if I could pick a favorite nut butter; it’s so hard. Perhaps a close tie between crunchy Trader Joe’s raw almond butter(MY FAV!!) and Woodstock’s crunchy PB…and I have to add nuttzo’s chocolate nut butter. Ahh the list could on for days.

  2. I kid you not – I totally have my own PB&J bars setting up in the fridge to be done! Mine are a tad bit different, but I have an oat crust too!! 🙂

  3. I’m all over the peanut butter and jelly. I think that almond butter is one of my favorite butters, but peanut butter seems to have the most potent, deep, bold flavor, so it’s my favorite. I like hazelnut too, but it’s kind of expensive. I need to come back and try these when I’m not knee deep in other baked goodies. 🙂

  4. Yep. You can’t go wrong with this combo. I know it exactly what you mean by “how can it be so good?!” I love all nut butters, but peanut definitely wins. Sunflower is a close second.

  5. As always, I love your food friday posts! (I’m a little behind in my reading this week!) PB&J is my absolute FAV food! I love anything with this combo. These could be very dangerous in my house. I don’t think they would last very long! I will definitely try them, but I may try them with PB2 instead of peanut butter. It won’t have the same richness, but I seriously can’t eat that much peanut butter and I wouldn’t be able to stop at a little piece!

    • Thank you! That’s okay! Glad you’re here now 😀 haha I can see it being hard to stop–they are definitely yummy! I havent tried PB2 yet–I havent wanted to give up my regular peanut butter! But I have a lot of ideas for recipes using the powder for extra peanut butter flavor!
