Foodie Friday: Vegetable Quiche Cups (GF)

Happy Friday! I hope everyone had a great week and that you have some fun things this weekend to look forward to. I’ll be celebrating my birthday with my sisters, their men, Daniel, and my parents tonight after work as Saturday is my birthday! Saturday I’ll be celebrating with Daniel and I’m looking forward to whatever he has planned for us. I’ll be doing some type of birthday recap next week so you will be able to hear about it then! Now, let’s talk about these Vegetable Quiche Cups!

Today’s Vegetable Quiche cups are gluten free, vegetarian, and could easily be made vegan if necessary. The creamy dipping sauce is the perfect pairing to the savory veggie-filled cups. You’ll have a veggie-packed dinner on the table in 30 minutes flat! 

Vegetable Quiche Cups (Serves 2)

Ingredients:

Vegetable Quiche Cups

  • 1 small can sweet peas, no salt added
  • 2 cups shredded zucchini (1 medium zucchini)
  • 1/2 white onion, diced
  • 2 eggs (or Chia egg if vegan)
  • 1/4 cup gluten free flour (I used a rice flour blend)
  • 1 teaspoon paprika
  • 1/2 teaspoon minced garlic
  • Salt & Pepper to taste

Directions:

  • Preheat the oven to 450 degrees
  • Spray muffin tin with cooking spray, butter, or coconut oil
  • Put all ingredients in a mixing bowl and mix with hands to combine (gross but necessary!) & place in muffin tin.

  • Bake 25-30 minutes, until quiche has set and tops are golden brown, while quiche cooks make dipping sauce

Dipping Sauce Ingredients:

Vegetable Quiche Dipping Sauce Ing

  • 1/3 cup Mayo or  unsweetened coconut milk yogurt
  • 1/2 teaspoon Dill Weed
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Garlic Powder
  • Salt & Pepper to taste

Directions:

  • Mix all ingredients in to small bowl
  • Once quiche is golden brown, serve with dipping sauce and enjoy!

Vegetable Quiche Cups Baked

I served mine with some sweet potato fries and steamed broccoli. This dipping sauce would also be delicious with a veggie platter at a BBQ or as a sandwich spread.
