Good Eats On Repeat!

Do you ever find a recipe so delicious that you can’t stop making it? I love finding these go-to recipes so I thought today I’d share my recent good eats on repeat!

Breakfast Eats on Repeat:

  • Baked Oatmeal: I have been making baked oatmeal on Sundays and then eating it for breakfast throughout the work week. My current favorite variation is Pumpkin chocolate chip baked oatmeal topped with melty peanut butter.   

I used this Home Beccanomic’s recipe but used dark chocolate chips instead of shredded coconut and I omitted pumpkin spice and chopped nuts. I topped it with about a tablespoon of peanut butter when I reheated it each morning and then spread it around like an icing. I hope you’ll check out her other recipes too, they are really delicious!

 Lunch Eats on Repeat:

  • Avocado toast with fried eggs: I’ve been really enjoying this simple recipe for lunch. I simply toast two pieces of gluten free toast, spread avocado on the toast, and top with a fried over-medium egg and optional slice of cheese. I season the egg with garlic powder and pepper. So good!

  • Stir Fry: I can not get enough of stir fry lately! I change up the protein I use or I just make a veggie stir fry. I also change up the stir fry sauce I make so it’s never exactly the same. I use rice noodles and switch up the veggies. My favorite veggie combo is shallots, mushrooms, bell pepper, and bok choy.

  • Grapes: I have been enjoying just regular red seedless grapes. I like to snack on them throughout the morning at work to help hold me until lunch. I usually snack on at least 1 cup of grapes sometimes more!  

Dessert Eats on Repeat:

  • Dark chocolate: At night I’ve been enjoying a cup of herbal tea and some dark chocolate. Current favorite teas are Peppermint, Honey Vanilla Chamomile, and Sleepy Time Vanilla. As for the chocolate, I’ve been enjoying Simply enjoy Belgian 85% dark chocolate. I’ll usually have 1 or two squares while I drink the tea and it really satisfies my night time sweet tooth.

  1. Love this! You know I love baked oatmeal. I had an applesauce-variation with sunflower butter this morning! Soooo good. Avocado toast with eggs is something I have a lot in the summer. I can get avocados for .50 a piece usually! I love garlic salt on it.

    • I love avocado season! For my recent avocado toasts ive been using those holy guacamole packets because fresh avocados are too expensive right now! yum garlic salt is the best with it!

  2. I’ve been making single serving oat pancakes lately – which are basically the even lazier, singular version of a baked oatmeal. But damn you have me craving an actual baked oatmeal now.
    How is eggs on avocado toast so delicious? Seriously – will never get sick of this combo. Perfection!
    I’ve been loving the noodle/veg stir fry I made on the weekend. So easy and such a great way to use of all sorts of veggies!

  3. Thank you so much for sharing the recipe for the baked oatmeal!! It looks amazing and I can’t wait to try it!! I love that you can bake it on Sunday and eat it all week. That’s perfect! I love avocado toast with eggs. But, I have yet to figure out the garlic seasoning on my eggs. Every time I try, they have been awful! I’m like you, when I find something I like, I at it until I’m tired of it!

  4. Yum!!!! I love baked oatmeal, but definitely want to try this recipe!! That stir-fry also looks amazing… I need to start buy rice noodles more often… I used to make pad thai at least once a week, but kinda forgot about it for some reason.

    • mmmm pad thai is so delicious!! I just tried edamame noodles which were good too. I’ve seen black bean noodles too but have yet to try them!

  5. Grapes are a total go to snack for me. I eat a banana every day, if I don’t my day seems out of whack, ha 😉
