Recent Eats

Hello and happy Monday to you. How was your weekend? Mine was not too shabby! I spent Saturday starting my baby registry with Daniel and we had a yummy lunch together afterwards. Sunday was church, niece time, and a Target run–some of my favorite things! Today I’m sharing some of my recent eats with you and I’d love to hear yours in the comments below!

Breakfasts:

Lately I’ve been back on the baked oatmeal train. While I was sick every day, the only thing I could stomach in the mornings was a gluten free bagel and orange juice. Happy to say I’m able to enjoy baked oatmeal with peanut butter in the mornings and some coffee on the side!

Other runner’s up have been overnight oats and traditional hot oatmeal. Favorite combos include maple syrup, nut butter of choice, cinnamon, and vanilla extract! Do you prefer sweet or savory in the mornings?

Lunches:

Lunches have been mostly leftovers from dinner the night before. Some recent lunch favorites have been roasted veggie pasta, vegetable stir fry, and vegan mac and cheese with peas and diced tomatoes. Sensing the carb theme? I definitely need to have plenty of carbs these days to keep me full! It’s crazy how quickly I’ve been getting hungry.

Dinners:

I’m trying to save more money on my grocery bills while still not compromising on quality ingredients and healthy foods. Lately for dinners I’ve been keeping things veggie-filled and simple! Some current favorites have been breakfast pizzas, tofu and veggie stir fry, and soup/salad combo.

  1. I totally didn’t even really do a registry for either boy because I’m lazy. I get overwhelmed way too easily. ANNDD we were in the process of buying a house and moving so I had no idea what we actually needed/what would fit/ etc. But ALLLL the carbs when you’re building a baby.

    • That’s okay! It was a lot to take in–I’m glad we’re going to do it in more than one trip. I was running out of energy after a couple of hours!

  2. That looks like a dang good tofu stir fry. My carb intake has been much higher lately. Lots more bread, baking and pasta. But you know what – I’m not reading into it. Its just what my body seems to want right now and it leaves my body feeling really good. So that’s a good thing! How fun to start the registry!! I would feel like it was Christmas all over again 🙂

    • Yes, I have definitely been upping the carb game too. I feel so much more satisfied! Glad to hear you are also enjoying the delights that are carbs haha. It was a lot like Christmas with that little scanner gun haha!

  3. Yeeeeah! You know I love me some leftovers for lunch, ha! Although mine never look as good as your feature image. Those green onions look like their dancing over those noodles!

    More baked oatmeal recipes, please! It’s literally so delicious, but I, for whatever reason, struggle to be creative with it. Since you’re the whiz, I know you have some crafty options up your sleeves!

    • Nothing like a good dancing green onion am I right?! hahaha! Sure, I could definitely share some of my favorite baked oatmeal combos as I’ve now tried about a million!

  4. I’ve been making a lot of tacos/quesadillas/crunch wraps lately! They’re so easy and cheap to throw together, and you can change up the toppings so much that it never gets boring.

    • MMMM mexican is the way to go! Such great cheap and healthy and throw it all together type meals which I’m totally loving now!
