I don’t know about you, but the last thing I feel like doing after working a full day is figuring out what to make for dinner. So to save myself time and money, (and for my own sanity) I plan my week’s menu the weekend before.
Usually on Saturday morning, I figure out what dinners I will be making for the next week. For inspiration, I usually go for some old favorites or browse cookbooks or recipes from Pinterest. I try to pick meals that share some of the same ingredients and spices to cut down on cost and number of items I have to buy. I have gotten better at this with practice. I always make sure I have some granola bars, nuts, peanut butter, bread, and Greek yogurt stocked up for snacks. If I ever run out of peanut butter…it is a very very sad day!
For breakfast I usually make sure I am stocked with oatmeal, eggs, and waffles. I almost always have some kind of eggs and toast for breakfast so I buy a dozen and a half at a time. I’ll usually buy two kinds of fruit for the week so that I still have variety but do not have so much fruit that it will end up going bad. I try and pick one type of grab and go type of fruit like apples and pears and one type of fruit that takes a bit of prepping like grapefruit and kiwi. (Side note: if you love grapefruit, I HIGHLY recommend buying grapefruit spoons. They might seem silly, but they are a dream and I love them!)
I typically make 4-6 servings of dinner each night and use the leftovers for easy lunches. Along with the leftovers, I will often make a big salad for the week or make up some chicken or tuna salad. I try to make things as simple and easy (AND delicious!) as possible. Here’s what this week’s dinner menu looks like:
- Sunday: Salmon Caesar Salad & Garlic Bread
- Monday: Chicken sausage & Veggie Rice Bowls
- Tuesday: Breakfast Flat bread Pizza & Fruit
- Wednesday: Black Bean Enchiladas & Broccoli
- Thursday: Ravioli & Salad
- Friday: Pizza & Green Beans
In addition to planning out our meals, I always make sure that I have all of my workouts planned for the week. I’m going to be honest…about 98% of the time, I do NOT feel like working out when I get home from work. I never regret doing my workout after it’s done, but it can be tough to get in to it!
I use Fitness Blender for all of my workouts. They are a husband and wife team that have hundreds of free workout videos. I could literally sing their praises night and day! I love being able to work out at home and I love that they’re all free…BUT this means you have to be extra motivated and you have to hold yourself accountable! Sunday afternoon I plan out my workouts and make them in to a playlist on YouTube so that after work I can put on some workout clothes, hit play, and get right in to it!
