Happy Wednesday, Friends! Today I’m linking up to share a day of yummy eats with you all for the What I Ate Wednesday link-up. This day of eats was captured on Monday. Hope you get some yummy ideas!
Breakfast: 6:10 am
Hearty square of dark chocolate chip pumpkin baked oatmeal topped with peanut butter and strawberries.
Coffee with vanilla coconut milk creamer on the side.
Coconut Milk yogurt, splash of maple syrup, pinch of cinnamon, GF vanilla granola, and more strawberries. I have been loving this yogurt alternative lately. The maple syrup cuts through some of the over-sour taste of the coconut milk and it’s a great combo!
Salad of mixed greens, banana peppers, tomato, and zucchini. Mixture topped with sun dried tomato and pesto hummus. Honeydew on the side which turned out to be so sweet and delicious! Don’t you love when that happens?
After a light lunch, I was ready to eat again by 2:30–I went for one of my favorite Larabars. I love this one and peanut butter chocolate chip best! On the side were 28749379 cups of water as it was 289284 degrees and my office air conditioner broke….it did eventually kick back on but we were without air for several hours and the heat index was well over 100 today!
Make your own burrito bowl for dinner! I had mixed greens, re-fried black beans, diced tomatoes, corn, homemade guacamole, salsa, diced onion, and wild rice. So yummy! Leftovers will make for a great lunch tomorrow! I love bowls like this…so satisfying and delicious!
