Hello and happy Wednesday to you! I’m going to find out whether my baby is a boy or girl tonight, so I’m a little bit excited! Today I’m sharing a full day of eats which was captured over the weekend. Enjoy!
Mango/Orange/Apple/Banana/Lemon juice which was quite delicious! I ate one egg topped with salsa and two gluten free waffles with peanut butter and honey on them. I also enjoyed un-pictured coffee with coconut milk creamer in it.
I decided on a chickpea “tuna” salad sandwich for lunch. First, I pulsed a can of chickpeas in my food processor and dumped it in a small mixing bowl. I then added old bay seasoning, salt, pepper, dill, celery, banana pepper, onion, mayo, and Dijon mustard and mixed it up. I enjoyed it on toasted gluten free bread and had an orange and some tortilla chips with it. Guys, this bread is so delicious! It’s probably moving up to the top position of favorite gluten free breads–the texture is soft and fluffy!
Coconut Milk yogurt with gluten free honey almond granola. I’m obsessed with granola this week. I actually just bought some more because I’m craving coconut milk yogurt and granola like every day!
Spicy black bean burger on a gluten free bagel with mayo, Dijon mustard, banana pepper, onion, and spinach. I also had some steamed broccoli seasoned with garlic powder, chili flakes, onion powder, and a splash of Tamari. Also, look how cute these happy potatoes are? I swear the shape of them makes them taste better!
