Happy WIAW, friends! Coming at you today with a day of eats from 3 weeks postpartum. Breastfeeding hunger is real and it reminds me of my 2nd trimester hunger. Here’s a day on my plate!
Oatmeal cooked in almond milk with cinnamon, vanilla extract, coconut sugar, and topped with peanut butter, cherries, and dairy free chocolate chips.
Veggie burger over salad and topped with salsa. I also had potatoes that my mother-in-law brought us that were cooked with onion and garlic and vegan cheese. I drizzled sriracha on the potatoes.
Smoothie made with frozen strawberries, bananas, blueberries, Vega chocolate protein powder, and almond milk.
Tofu and vegetable stir-fry. I marinated tofu in sriracha, garlic powder, onion powder, tamari, and paprika for several hours. I then stir fried frozen stir fry veggies and added the tofu and cooked brown rice to the mixture.
Random gluten free frozen waffle and an almond milk pudding. Random but delicious combo! It was the Van’s gluten free brand waffle.
