WIAW: 3 Weeks Postpartum

Happy WIAW, friends! Coming at you today with a day of eats from 3 weeks postpartum. Breastfeeding hunger is real and it reminds me of my 2nd trimester hunger. Here’s a day on my plate!

Breakfast:

Oatmeal cooked in almond milk with cinnamon, vanilla extract, coconut sugar, and topped with peanut butter, cherries, and dairy free chocolate chips. 

Lunch:

Veggie burger over salad and topped with salsa. I also had potatoes that my mother-in-law brought us that were cooked with onion and garlic and vegan cheese. I drizzled sriracha on the potatoes. 

Snack:

Smoothie made with frozen strawberries, bananas, blueberries, Vega chocolate protein powder, and almond milk. 

Dinner:

Tofu and vegetable stir-fry. I marinated tofu in sriracha, garlic powder, onion powder, tamari, and paprika for several hours. I then stir fried frozen stir fry veggies and added the tofu and cooked brown rice to the mixture. 

Dessert:

Random gluten free frozen waffle and an almond milk pudding. Random but delicious combo! It was the Van’s gluten free brand waffle.

    • I hadnt tried that combo before either but my mom brought us over some cherries–it was good! I love the tropical smoothies too–especially with some coconut water added.

  1. Alll this looks super yummy! I have never thought of marinating tofu in Sriracha but sounds delish! ANYTHING sriracha- toss my way! Thanks for sharing. I’m so glad you’ll still be posting even with the new babe and new season of life<3

  2. I am ALL about cherries + chocolate right now! Must be the summer weather. And I’ve been wanting to try Vega for a while now. Everything looks dee-lish. 🙂
