Hello and happy WIAW to you! Today I’m sharing a day of eats at 32 weeks pregnant captured on Monday. I tend to do these on weekend days when my food doesn’t come out of Tupperware. However, today’s is a pretty typical work day Tupperware and all!
WIAW: 32 Weeks Pregnant
Baked Oatmeal Square with peanut butter. Coffee with coconut milk on the side.
Coconut yogurt, Strawberries, and vanilla granola parfait.
Spicy black bean veggie burger with pickles and mustard over steamed mixed veggies and a side of roasted potato wedges. I used a mix of russets and sweet potatoes. This was my dinner the night before and I made extra for lunch. This is what I typically do for my work lunches.
Lately I’ve been obsessed with carrots and hummus which is odd because I normally don’t particularly enjoy raw carrots much. I had these carrots with black bean hummus and a banana muffin on the side.
Gluten free pasta with roasted eggplant and sauteed red onion, tomatoes, spinach, and garlic. I mixed it all together in a tomato basil sauce and added cracked pepper and red pepper flakes on top. We enjoyed eating our dinner on our balcony which was lovely!
So Delicious double chocolate cashew milk ice cream bar also enjoyed on the balcony before heading off to sleep!
