WIAW: 32 Weeks Pregnant

Hello and happy WIAW to you! Today I’m sharing a day of eats at 32 weeks pregnant captured on Monday. I tend to do these on weekend days when my food doesn’t come out of Tupperware. However, today’s is a pretty typical work day Tupperware and all! 

WIAW: 32 Weeks Pregnant

Breakfast:

Baked Oatmeal Square with peanut butter. Coffee with coconut milk on the side.

Snack:

Coconut yogurt, Strawberries, and vanilla granola parfait. 

Lunch:

Spicy black bean veggie burger with pickles and mustard over steamed mixed veggies and a side of roasted potato wedges. I used a mix of russets and sweet potatoes. This was my dinner the night before and I made extra for lunch. This is what I typically do for my work lunches.

Snack:

Lately I’ve been obsessed with carrots and hummus which is odd because I normally don’t particularly enjoy raw carrots much. I had these carrots with black bean hummus and a banana muffin on the side. 

Dinner:

Gluten free pasta with roasted eggplant and sauteed red onion, tomatoes, spinach, and garlic. I mixed it all together in a tomato basil sauce and added cracked pepper and red pepper flakes on top. We enjoyed eating our dinner on our balcony which was lovely! 

Dessert:

So Delicious double chocolate cashew milk ice cream bar also enjoyed on the balcony before heading off to sleep!

  1. ooh that double chocolate cashew milk bar sounds delicious, and your square of baked oatmeal is yummy looking too. Actually, all of it looks really good. A yogurt parfait is a really delicious snack. It combines some of my very favorite ingredients, yogurt, granola, and fruit! Hmmmm … My favorite work week lunch is either leftovers or a quick wrap/sandwich!

    • I know I can’t believe I’m wanting to eat raw carrots! I blame baby girl not me haha! As for pickles, I’ve always loved them but the intensity of the love is amped up haha! Last week, I woke up at 2am to go to the bathroom (of course!) and I was craving pickles on toast hahaha

  2. I’ve been doing a lot of stir-fry lately! My hubby is OBSESSED with them right now, but I totally don’t mind because it’s a great way to get more veggies into him!! 🙂

  3. This looks like such a yummy day of food. Baked oatmeal is something I always seem to be craving but never get around to making. Do you have a good recipe to share? Eating outside is one of my favorite things about the warmer weather. It’s so relaxing 🙂

    • Thanks Evangeline! I change up the oatmeal from week to week but typically I do:
      Dry Ingredients:
      3 Cups Oats
      2 teaspoons baking soda
      Pinch of salt
      1 Tablespoon cinnamon
      Wet Ingredients:
      3 Cups almond milk
      1 flax egg, regular egg, 1/4 cup applesauce or 1 mashed banana
      2/3 cup coconut yogurt
      1/3 cup maple syrup
      1 cup pumpkin puree
      1/2 Teaspoon Vanilla Extract
      Dark chocolate chips

      Mix all dry ingredients and stir and mix wet ingredients in a separate bowl and whisk to combine. Then I add the wet to the dry, stir in chocolate chips and pour in a greased 13X9 baking dish and bake at 400 for 25-30 minutes.

  4. Mmmm those oatmeal squares look like a dream! Also do you make your own bean hummus or buy it from the store? I have bought a few different ones from Sprouts, but they are sorta sweet. And that pasta looks to die for! Favorte work week lunch: I pack weird…. We have short breaks so I don’t have much time to eat full meals… so I pack boom chicka pop, no cow bars, hummus and carrots, almonds, and fruit, usually an apple or grapes. I’m still usually starving when I get out of my 12 hour shift though. And go-to work week dinner is either salmon with asparagus and rice or my vegan stuffed potato ( https://mackmarie.com/2017/02/07/macronutrient-packed-sweet-potato-high-protein-good-fats-complex-carbs/ ). It’s like a good, easy, healthy comfort food after long days. I also love making giant salad with all the veggies, avocado, and Morningstar black bean burgers. I could talk food all day!

    • I havent yet made my own bean hummus. This one was from my grocery store and it was mixed in with a spicy corn salsa on top which was really good! Yum I cant wait to check out that potato recipe–I love baked potato recipes! Black bean burgers are a staple in my house for quick protein too!
