Happy WIAW! I’m happy to report that the work week has not been dragging as it so often does. How’s your week going so far? Thanks for all of your well wishes in my post when I mentioned the discomfort I’ve been feeling with baby girl dropping. Lately with my food, I’m sticking to basic foods and not being too picky about anything. Also, we’ve been keeping things pretty basic around here so throw together meals have been my saving grace! Here’s a day of eats at 35 weeks pregnant!
Oats cooked in cashew milk with vanilla, cinnamon, and coconut sugar. I topped the oats with dairy free chocolate chips and peanut butter. I love oats because they’re healthy, cheap, versatile, quick to make, and keep my blood sugar stable throughout the morning.
So Delicious Coconut Yogurt (plain kind) with strawberries. I didn’t have any granola left otherwise I would’ve added that as well. I love taking this yogurt and fruit with me to work for a morning snack. It seems to be the perfect snack to get me through until lunch.
I enjoyed some pizza with two coworkers today! I didn’t take a picture of my pizza because I was with my coworkers and felt weird. That being said, please enjoy this recycled photo from the last time I visited this pizza place. Today’s specific pizza had vegan cheese, mushrooms, red onions, zucchini, and banana peppers.
I had a handful of roasted cashews after work and then had a failed attempt at a nap. I think I slept maybe 5 minutes before baby girl started doing her dance moves. For dinner I made a spicy black bean burger with mustard, mayo, pickles, and banana pepper on my FAVORITE new gluten free bread find! I also had French style green beans which were seasoned with minced garlic, pepper, onion powder, and dill and a small baked sweet potato leftover from the day before. I had a handful of dark chocolate almonds after dinner.
