Hello, friends! Last weekend, I spent a day with my cousins, sisters, and niece at the beach. We’ve done this five years in a row now and it’s become a fun tradition. Today I’m sharing what I ate throughout the day as well as some pictures from our fun day!
Finished out the last of the week’s pumpkin chocolate chip baked oatmeal and of course topped it with peanut butter. I also had coffee with a new to me creamer in it which I’ve been liking.
This creamer is made with almond cream and coconut cream and is caramel pecan flavored. It’s really thick but dissolves right away in the coffee and its really tasty! Plus, only 2g of sugar per serving which is great for a flavored creamer!
We arrived at the beach around 11-11:30 and set up camp. After playing in the sand for a bit and taking the babies down to feel the water, I decided to eat my lunch. I had a wrap with a gluten free spinach tortilla, balsamic roasted veggies, and spicy avocado hummus.
I also ate an apple on the side; two of the slices were shared with little toddler hands 😀
After a lot of running in the waves and chasing after the toddlers, I was ready for another snack. I had this protein bar which I found at Target. It’s vegan, gluten free, and doesn’t have a weird after taste that many protein bars have. I thought the texture was similar to a cookie bar and the flavor was great!
For dinner, we headed off to the boardwalk to get something to eat. I settled on these puppies. Two hard corn shell tacos with sauteed veggies, lettuce, salsa, and a side of re-fried beans which I added to the taco. They wouldn’t let me order the beans on the taco…I could only have a side of beans? It was weird.
I was happy to find a dessert option that I could eat on the boardwalk! I enjoyed banana whip with peanut butter. Banana whip is simply whipped up frozen bananas…nothing else! It tasted just like soft serve ice cream and was really delicious with the peanut butter! (I really should call this post Peanut Butter Appreciation Day).
It was such a lovely day to run around and to relax and enjoy time spent with family. I hope we are able to continue this little tradition of ours even as our family grows. The more cute babies the merrier! 😀
