WIAW: Carbs Keep Me Full

Hello, friends! Happy Wednesday to you! I’ve decided to bring you a WIAW every Wednesday this month rather than my usual twice a month. People seem to really enjoy them and I know that I love them myself too! Today’s eats were captured yesterday! 

WIAW: Carbs Keep Me Full

Breakfast:

Oatmeal with blueberry maple syrup (God bless you, Canadians for this brand that I found), vanilla extract, cinnamon, and peanut butter. I always eat about 1 cup of oats sometimes more! It keeps me satisfied and full and I always add in some nut butter to make it even more filling! 

Lunch:

I had to finish out the Vegan Portobello Stroganoff recipe so I added some spinach while it heated on the stove. It wasn’t quite enough to fill me, so I added a baked sweet potato which I topped with edamame hummus. This might sound super bizzarre but it was a great combo! I baked up about 5 or 6 small sweet potatoes on Sunday and have been enjoying them with meals…such a time saver!

Snack:

Coconut Milk Yogurt, Strawberries, and granola. I have a feeling this combo will be on repeat as the weather gets warmer. I crave parfaits and fruit like nobody’s business in the warm weather!

Dinner:

Made Quesadillas with sauteed bell pepper, onion, spices, garlic, and a little bit of Beyond Meat crumbles (soy crumbles that are vegan). I also made up some rice which I cooked in vegetable stock for the side. I topped the quesadilla with guacamole and tomatillo salsa and ate it with a fork and knife. These gluten free tortillas held together rather well! They are the Rudi’s brand.

Dessert:

Ended the day on a sweet note with an almond milk ice cream bar. This flavor was Mocha Almond Fudge. I hope that you have a great Wednesday, foodie friends!

    • MMM Carbs for life! 😀 It was seriously so good–I think even if you aren’t eating dairy free, they would be a big hit!

  1. Haha that makes three of us eating oatmeal with peanut butter together. I’ve learned that carbs are the only thing that really satisfy me and keep my brain off of food – much more than even protein and fats. What do you think of the edamame hummus? I’ve always been curious to give it a try. That ice cream bar also looks soooo good.

    • Me too! I need more carbs than the average person to be satisfied I think! I am liking the edamame hummus! They were on sale 2 for 6 last week and I also got a spicy black bean hummus which I haven’t opened yet. I feel like it will be delicious too. The ice cream bar? I wanted to eat like 4 of them last night haha!

  2. CARBS are my favorite. Well, I really like fat too, because nut butter is so good. But I love putting my fats on my carbs. Nut butter on bread or sweet potatoes or fruit. The hardest nutrient for me to eat a lot of is protein, but I do really like Greek yogurt so I guess that helps. Thank you for sharing that love for carbs. Do you usually do oats + peanut butter for your bowls of oatmeal or do you add anything else?

    • Nut butter is so so great too–probably my favorite alongside carbs haha. I love beans and nut butters for proteins. I love oats and peanut butter best but I also love some blueberry and vanilla or chocolate strawberry additions too!

  3. Carbs can’t be absent from any meals… unless I want to be eating again in <1 hour.
    I've been craving cold cereal lately like no other time before. It's been hitting the spot!
