Hello, friends! Happy Wednesday to you! I’ve decided to bring you a WIAW every Wednesday this month rather than my usual twice a month. People seem to really enjoy them and I know that I love them myself too! Today’s eats were captured yesterday!
WIAW: Carbs Keep Me Full
Oatmeal with blueberry maple syrup (God bless you, Canadians for this brand that I found), vanilla extract, cinnamon, and peanut butter. I always eat about 1 cup of oats sometimes more! It keeps me satisfied and full and I always add in some nut butter to make it even more filling!
I had to finish out the Vegan Portobello Stroganoff recipe so I added some spinach while it heated on the stove. It wasn’t quite enough to fill me, so I added a baked sweet potato which I topped with edamame hummus. This might sound super bizzarre but it was a great combo! I baked up about 5 or 6 small sweet potatoes on Sunday and have been enjoying them with meals…such a time saver!
Coconut Milk Yogurt, Strawberries, and granola. I have a feeling this combo will be on repeat as the weather gets warmer. I crave parfaits and fruit like nobody’s business in the warm weather!
Made Quesadillas with sauteed bell pepper, onion, spices, garlic, and a little bit of Beyond Meat crumbles (soy crumbles that are vegan). I also made up some rice which I cooked in vegetable stock for the side. I topped the quesadilla with guacamole and tomatillo salsa and ate it with a fork and knife. These gluten free tortillas held together rather well! They are the Rudi’s brand.
Ended the day on a sweet note with an almond milk ice cream bar. This flavor was Mocha Almond Fudge. I hope that you have a great Wednesday, foodie friends!
