Hello!! We’ve made it to the halfway point of the work week! I hope you’re hanging in there…I hope I am hanging in there too as I’m writing this post a day in advance. Today I’m linking up for another WIAW post. I had no theme in mind going in to this day but realized I had quite a chocolatey day so we’re going for it!
The night before I made Kate’s Coconut Flour Breakfast Bake for Br’inner and LOVED IT! It made four servings so I decided to have my 2nd portion for breakfast. Guys, make this recipe it’s totally delicious! I added dark chocolate chips and peanut butter to the bake and topped mine with some more peanut butter and fresh berries. I also had coffee with coconut milk creamer.
At work, I had to go to a two hour meeting beginning at 10, so I quickly ate this granola bar because I knew I wouldn’t be able to eat until lunch. This was my first time having this flavor and I really liked it..great for a quick snack.
After the meeting, we were given a free lunch! I brought my own gluten free bread and made a sandwich with the lunch meat platter. This had mayo, smoked turkey, lettuce, and tomato. I also had two pickles and sweet potato salad with roasted pecans. It looks like a boring blob of orange but it was extremely delicious!
I was really hungry when I got home from work so I made this quick shake before I worked out. It had 1 cup of almond milk, 1 scoop of Vega chocolate protein powder, 2 ice cubes, 1 teaspoon of almond butter and a pinch of cinnamon. It really hit the spot! I then did a lower body strength training butt and thigh workout which was really killer!
For dinner I had Friday’s Foodie Friday recipe so it took twice as long to get dinner ready. That was okay with me though because I was so happy with how it turned out. It’s gonna be a delicious one! On the side I had sweet potato fries, avocado, and tomato. It’s vegan, gluten free, and delicious! Coming your way Friday!
I enjoyed a random half of a chocolate chip cookie that I had bought from the vegan gluten free bakery nearby and some dark chocolate truffle cashew milk ice cream.
Some days all I want is savory, some days all I want are veggies and fruits, and some days like today, I have a raging sweet tooth. I try to listen to my cravings and enjoy the foods without saying they’re “bad” or “good” foods. Now, I feel satisfied and ready for some savory tomorrow. I’ll see ya tomorrow for some Thinking Out Loud!
