WIAW: Eating Before Vacation

I decided to capture a day of eats the day before leaving for vacation. I was trying to use up any food we had since we wouldn’t be home for a week.Wasting food is the worst and I can’t stand it! So, here is my day of finishing what’s left in the fridge! 

Breakfast:

The last egg fried and topped with salsa. I also finished off the spinach by cooking it in 1 teaspoon of vegan butter and some garlic powder. I also had leftover potatoes from the night before on the side!

Snack:

After enjoying my first workout in a month, I was hungry! I’m so happy to be back to working out again now that my back and neck are feeling better! I made a smoothie with strawberries, 1 frozen banana, cinnamon, 1 teaspoon of peanut butter, 1 teaspoon of unsweetened cocoa powder, and almond milk. 

Lunch:

Chickpea “tuna” sandwich on the last two pieces of GF bread (which I toasted). I also had a small apple which I dipped in a combo of unsweetened coconut milk yogurt, peanut butter, cinnamon, and honey. It was yummy!

Shortly after, I enjoyed some decaf coffee and two of these cute little dark chocolate pumpkins! Arent they cute? Dove makes them!

Dinner:

Leftover savory pumpkin sauce with rice noodles and added shredded carrots, red and green onion, and green bell pepper. I topped it off with pepper and a splash of soy sauce.

  1. Ohh do you have a recipe for the chickpea tuna? I’m interested in trying one out but also kind of nervous! I’m the same way when it comes to going on vacation- eat all the things. Are you planning on staying mostly vegan on vacation or do you just eat whatever you want? I try to eat vegan if I can but if there’s no options then I’m fine with having some meat, but only when I’m traveling, whereas Dan will just eat whatever he wants when we’re out and eats vegan at home.

    • Yes! I used this recipe: Hot For Food Blog Chickpea Tuna I ended up just eating what everyone else was eating to make it easier. I think next time, I’ll cook my own food. We ran in to a lot of issues with getting to the food store when we got there because of the hurricane…so I had to be flexible!

  2. that savory pumpkin sauce sounds delish! I would love that- I’ve been loving all the pumpkin things lately. And that breakfast looks great. Eggs are such a classic yet are so so goooood!

  3. I LOVE the “clean out the fridge” challenge before moving or going away! I’m always so surprised at how much I actually have, when I thought I “had nothing.” It forces me to be creative with my recipes, try new combinations and discover new things I forgot I liked. This day looks delicious – well done! Have a wonderful time away!

    • That’s so true! I always end up having so many random things from my pantry to throw together! I had such a great trip–cant wait to share some pictures 🙂
