I decided to capture a day of eats the day before leaving for vacation. I was trying to use up any food we had since we wouldn’t be home for a week.Wasting food is the worst and I can’t stand it! So, here is my day of finishing what’s left in the fridge!
The last egg fried and topped with salsa. I also finished off the spinach by cooking it in 1 teaspoon of vegan butter and some garlic powder. I also had leftover potatoes from the night before on the side!
After enjoying my first workout in a month, I was hungry! I’m so happy to be back to working out again now that my back and neck are feeling better! I made a smoothie with strawberries, 1 frozen banana, cinnamon, 1 teaspoon of peanut butter, 1 teaspoon of unsweetened cocoa powder, and almond milk.
Chickpea “tuna” sandwich on the last two pieces of GF bread (which I toasted). I also had a small apple which I dipped in a combo of unsweetened coconut milk yogurt, peanut butter, cinnamon, and honey. It was yummy!
Shortly after, I enjoyed some decaf coffee and two of these cute little dark chocolate pumpkins! Arent they cute? Dove makes them!
Leftover savory pumpkin sauce with rice noodles and added shredded carrots, red and green onion, and green bell pepper. I topped it off with pepper and a splash of soy sauce.
