Happy WIAW! Today I’m sharing a day of eats captured on January 1st. I hope that it gives your some meal ideas for this new year! 

WIAW: First Day of 2018


1 Cup of Oats made with half water and half almond milk. Added coconut sugar, dairy free chocolate chips, cinnamon, vanilla, flax seed, unsweetened shredded coconut and almond butter.


Half the plate is reheated leftovers from dinner the night before. Jasmine rice, roasted tofu, mushrooms, onions, and steamed broccoli in a sweet chili sauce. The other half of the plate is salad with carrots, bell pepper, romaine, spinach, and balsamic.


2 Clementines and a nut/cranberry pack.


Simply Quinoa’s Slow Cooker Lentil Sloppy Joe’s on a multi-grain GF roll. Side salad with grape tomatoes, cucumber, and carrot with balsamic. Find her recipe here: Slow Cooker Lentil Sloppy Joes


2 cookies and some vegan drinking chocolate.

    • Yes! I’m definitely hungrier and require much larger portions than I did before. I also eat carbs all the time…which I did before too but now even more so. I’m not complaining haha!

  1. Those sloppy joes look so good! I eat dessert pretty much every day if we have it in the house, but don’t usually miss it if we don’t have anything sweet laying around. Right now we still have Christmas stocking chocolate, so there will almost certainly be some dessert tonight 🙂
