Happy WIAW! Today I’m sharing a day of eats captured on January 1st. I hope that it gives your some meal ideas for this new year!
WIAW: First Day of 2018
1 Cup of Oats made with half water and half almond milk. Added coconut sugar, dairy free chocolate chips, cinnamon, vanilla, flax seed, unsweetened shredded coconut and almond butter.
Half the plate is reheated leftovers from dinner the night before. Jasmine rice, roasted tofu, mushrooms, onions, and steamed broccoli in a sweet chili sauce. The other half of the plate is salad with carrots, bell pepper, romaine, spinach, and balsamic.
2 Clementines and a nut/cranberry pack.

2 cookies and some vegan drinking chocolate.
