WIAW: Hello, Third Trimester!

Hello and happy WIAW to you, friends! This day of food was captured on my day off on Monday. I took off because I had a morning doctor appointment and an afternoon ultrasound. Enjoy and I hope you get some recipe ideas!

Breakfast:

Baked oatmeal with peanut butter and strawberries. Coffee with hazelnut soy milk creamer in it. 

Snack:

Grapes and an apple with cinnamon on top. Still liking the oranges best with cinnamon but apples were also good!

Lunch:

Reheated rice bowl from a previous dinner. Bed of arugula, black beans, sauteed onions and mushrooms, cilantro, tomatoes, wild rice, and salsa. I also had a few blue corn tortilla chips and dipped it in. 

I also ate a banana muffin which were really delicious! I’ll definitely make them again!

Dinner:

BBQ cauliflower wings, sweet potato fries, broccoli, and a vegan ranch dipping sauce. Haven’t made this recipe in a few months and it was delicious!

Dessert:


Almond milk ice cream (peanut butter vanilla flavor!) and a brownie…it was much needed!

  1. Those bbq cauliflower wings look so delicious! I love pretty much all desserts, but my favorites include funfetti cake and donuts (I don’t like them for breakfast, but always order a donut hole type dessert at restaurants if it’s on the menu). Apparently my dessert taste is not that sophisticated lol…

  2. Is there a cauliflower wing recipe you can recommend? I’ve been wanting to give those a try. If I could have it at the ready all the time – I would have either a brownie or hot apple crisp with ice cream every night.

  3. Wow! Congrats on making it to the third trimester! Are you nervous? I’d be so nervous.
    The America’s Test Kitchen How Can It Be Gluten-Free Cookbook has an ah-mazing recipe for brownies. I’ve also made it dairy-free a couple times by swapping coconut oil for the butter and using Enjoy Life chocolate. I’ve literally had people tell me they were the best brownies they’d ever had without even knowing that they were gluten- and dairy-free.

  4. Happy third trimester! Almost there 🙂 I absolutely love brownies but don’t really make them much. Maybe that’s why they always taste so good and are special, because I never have them at home! I love them when they’re all nice and warm and gooey 🙂
