WIAW:Lazy Sunday

Hello and welcome to the WIAW link-up party! Today I’m sharing a day of food from Sunday. I had last week off from work, so I wanted to be sure to have a nice relaxing Sunday to end my vacation. I must say I had some major post-vacation week blues and the thought of going back to work was pretty terrible. Onward to the food!

Breakfast (9:15):

Coffee van almond milk creamer

Coffee with a splash of vanilla almond milk. With a side of two episodes of House Hunters International.

Eggs Toast & vegan cheese

Two eggs on GF multi-grain bread, and vegan cheese THAT IS ACTUALLY DELICIOUS!

After breakfast, I worked on blog stuff for two hours which was glorious! By then I was ready to get moving and did a lower body strength training workout.

Lunch (1:00):

Stir Fry Lunch black bean noodles

After the workout, I was starved so I sauteed onion, mushroom, baby kale, and carrot in vegetable stock for about 8 minutes and seasoned the veggies with garlic powder, nutritional yeast, cumin, and pepper. I added cooked black bean noodles and topped it off with sesame seeds and a GF Korean BBQ sauce.

Snack (2:30):

Smoothie Bowl Snack

I was still feeling hungry and slightly dehydrated, so I decided on a hydrating smoothie bowl. For the smoothie, I added 2 cups frozen watermelon, 1/4 cup frozen blueberries, 2 cups of water, and a splash of almond milk to the blender. (Serves 2)

Once blended, I added GF vanilla granola, dark chocolate chips, and fresh blueberries on top. 

In the afternoon I showered, did food prep, and started a new book. It was nice to be able to sit down and read and not be plugging away at a million other things. 

Dinner (7:00):

Mexican black bean burger dinner

I roasted 2 cut up sweet potatoes which I seasoned with nutritional yeast, garlic powder, olive oil, and pepper. I roasted them in a 425 degree oven for about 25 minutes, turning them over after 12 minutes. I served it with baby kale, Brussels sprouts, homemade guacamole, and a veggie burger. 

Post Dinner sweet

Less than 5 minutes after dinner, I had a dark chocolate square because I needed something sweet! This one was 85% dark chocolate with sea salt.

  1. I love dark chocolate with sea salt! Such a great pick.
    This looks like such a relaxing day. I love when I can have all my meals/snacks at home, it’s a great time to get creative.

    • I most certainly did! I went to the beach friday-tuesday and then had a stay-cation at home the rest of the week. totally glorious!

  2. Oh summer holiday days… how lovely does this all sound. Starting a new book and having a relaxing morning? What bliss.
    You make your lunch sound so “oh I just threw this together” but damn – you’ve got some serious skills. That bowl sounds delicious! I haven’t ever tried black bean noodles… are they similar to regular?

    • Thank you, Cora! I really did throw it together…its easy! Black bean noodles are just water and black beans and theyre very similar to rice noodles. Theyre great if you want to add in some protein to the meal!

  3. I have been wanting to give DF cheese a try! Also- those black bean noodles look great. Definitely gives me a good lunch idea! And yes for ending the night on a sweet note- that is always a must 🙂

  4. I like cheese on my burgers, specifically bleu cheese 🙂 I love guac and would totally put it on a burger, but I can honestly say that I never have! Looks like I’m going to need to do that soon.
