Hello, friends! How was your Memorial Day weekend? Mine was great! Friday night I was able to get out of work early and just come home and relax. Saturday I had a maternity photo shoot and I CAN NOT WAIT TO SHARE THE PHOTOS! The rest of Saturday was lunch out, food shopping, and a BBQ and fire with s’mores at my sister’s house. Sunday I went to church and then looked through some of my sister’s baby clothes and was able to take quite a bit! Monday was a nice relaxing and slow paced day off with Daniel which is just what I needed and wanted! Today’s eats were captured on Memorial Day.
WIAW: Memorial Day Eats
Went for a bit of a red, white, and blue breakfast! I had oatmeal with blueberries, chocolate chips, coco whip, and peanut butter. I also had a side of watermelon. Anyone else super pumped about the deliciousness that is summer produce?!
Daniel and I walked around the mall for a little bit of activity and then stopped at Grand Lux Cafe for lunch. This restaurant is a chain owned by the same company as the Cheesecake Factory. It was really good! I had a salad with mixed greens, grilled shrimp, black beans, corn, avocado, tomato, bell pepper, and red onion with a cilantro lime dressing. I also split an order of fries with Daniel.
I had two Immaculate Baking chocolate chip cookies when we got home. One thing that’s really hard about not being able to have dairy/gluten is not being able to easily enjoy dessert at a restaurant. Luckily we had these on hand to enjoy when we got home!
I wasn’t too starving for dinner so I made a shake with 1/2 frozen banana, 1 regular banana, strawberries, and cashew milk. I also toasted a GF everything bagel and topped it with Go Veggie vegan cream cheese and sliced tomato with cracked pepper.
