WIAW: Memorial Day Eats

Hello, friends! How was your Memorial Day weekend? Mine was great! Friday night I was able to get out of work early and just come home and relax. Saturday I had a maternity photo shoot and I CAN NOT WAIT TO SHARE THE PHOTOS! The rest of Saturday was lunch out, food shopping, and a BBQ and fire with s’mores at my sister’s house. Sunday I went to church and then looked through some of my sister’s baby clothes and was able to take quite a bit! Monday was a nice relaxing and slow paced day off with Daniel which is just what I needed and wanted! Today’s eats were captured on Memorial Day.

WIAW: Memorial Day Eats

Breakfast:

Went for a bit of a red, white, and blue breakfast! I had oatmeal with blueberries, chocolate chips, coco whip, and peanut butter. I also had a side of watermelon. Anyone else super pumped about the deliciousness that is summer produce?!

Lunch:

Daniel and I walked around the mall for a little bit of activity and then stopped at Grand Lux Cafe for lunch. This restaurant is a chain owned by the same company as the Cheesecake Factory. It was really good! I had a salad with mixed greens, grilled shrimp, black beans, corn, avocado, tomato, bell pepper, and red onion with a cilantro lime dressing. I also split an order of fries with Daniel.ย 

Dessert:

I had two Immaculate Baking chocolate chip cookies when we got home. One thing that’s really hard about not being able to have dairy/gluten is not being able to easily enjoy dessert at a restaurant. Luckily we had these on hand to enjoy when we got home!

Dinner:

I wasn’t too starving for dinner so I made a shake with 1/2 frozen banana, 1 regular banana, strawberries, and cashew milk. I also toasted a GF everything bagel and topped it with Go Veggie vegan cream cheese and sliced tomato with cracked pepper.ย

    • It’s also hard when you’ve found the ultimate go-to dish at a specific restaurant. It’s almost like you can’t order something else because you know it wont be as good!

  1. Mmmm the cream cheese/tomato/pepper combo. A delicious classic.
    You had such a fabulous sounding weekend. I definitely saw s’mores in there. And BBQ. Yummmmm.
    I have this guilt brain where I feel bad ordering the same thing over and over so I try to change it up all the time. But when there’s something you know you love, there’s nothing wrong with just giving in.

    • I try to change things up too. I have guilt brain when out with a group. I refuse to order the same thing as another person at the table–even if I really want it!

  2. I love the Cheesecake Factory; they do such a variety of food really well. I have to admit that their cheesecake is the best; I wish they had a cheesecake you could eat! That’s neat that you are well stocked with GF/DF desserts to enjoy when you get home.

    I love ordering salads if I’m not feeling like anything adventurous. It’s always fun to share a dish with one of my family members too. They often order burgers or sandwiches.

  3. I definitely have a go-to at certain restaurants. There are a number of restaurants in Fort Collins that have an wide variety of delicious food, but if I go to them, it’s always because I’m craving my favorite dish.
    I’m so excited to see your maternity photos!
    As for summer produce: fresh, local tomatoes. I know it’ll be a month or two yet, but I’m so excited!

  4. Your oatmeal always looks so good. And, I am super excited about all the produce! I can’t get enough! I am usually a creature of habit when we eat out. I will try and rotate between two or three favorites, but I pretty much stick to the same thing. My favorite dessert is chocolate chip cookies! I could eat them for breakfast, lunch, and dinner…not just dessert! ๐Ÿ™‚

    • Thanks, Tara! You can’t beat chocolate chip cookies. I always loved those skillet cookies at restaurants too!

  6. Immaculate Baking goodies are amazing. I just bought a can of their biscuits, and I’m excited to try them. I can’t wait to see the pics from your shoot! So exciting! I’m sure they’re absolutely beautiful ๐Ÿ™‚

  7. I’m so happy it’s watermelon season! I need to pick up my first one this weekend. And that’s a bummer about most desserts, you should open a vegan/gluten free bakery. I usually always order fish when eating out, because I always seem to have a hard time cooking it at home and my husband isn’t the biggest fan.

    • There’s a vegan/GF bakery sooo close to my apartment! I definitely go there when I need a treat. I just miss being able to order big chocolate cake or one of those skillet cookies or something!
      I do enjoy fish every so often when out too!
