WIAW: Quick and Easy

Hello friends! I’ve somehow managed a 2nd post for this week. Miracles! Today I’m popping in to share a day of eats with you all. It’s been challenging making time for meals in general as Aubrey’s going through a growth spurt and feeds almost constantly. Here’s a day on my plate from semi-recently!


Baked oatmeal square with peanut butter and blueberries. Watermelon on the side. Watermelon is the best ever. I can’t get enough of the stuff in the summer. I made the baked oatmeal with quick oats, mashed banana, applesauce, and dairy free chocolate chips. Turned out pretty flat and not as fluffy as I was hoping but it was a good quick breakfast to reheat for the week.


All I ever want to do is eat veggie burgers these days. They’re quick and easy and the kind I buy have good ingredients! Current favorites are Dr. Praegers! They have a whole bunch of gluten free veggie burgers! This lunch was a veggie burger with pickles, vegan cheese, and mayo. Side of steamed broccoli and sweet potato fries! I’ve been buying the frozen fries rather than making my own the past few weeks!


I ate 402490 of these crackers while I nursed. I really wanted my dinner but Aubrey was screaming to eat so I grabbed these crackers and fed her. It did the trick of holding me over. These crackers are pretty good if you’re looking for gluten free cracker options.


Reheated this delightful dish that my mother-in-law brought over for us. It is stuffed zucchini with burrito ingredients. Not sure of the official name but it was delicious! Also finished out the steamed broccoli from lunch on the side. 

Do you prefer several small meals a day or do you like to do three hearty meals?

  1. Good stuff, Heather!! Some of my favorites here. I don’t care what anyone says, frozen fries are way better than anything homemade. And how is it that crinkle cut can taste so much better than regular??

    Your mother in law is on to something here. I love this idea of burrito stuffed zucchini.

    For me I much more enjoy three solid meals vs a bunch of small ones. I’m not that snarky of a person.

    • Yes! Crinkle cut and waffle fries are my faves! I’ve been enjoying three larger meals lately since I’m short on eating time.

  2. Those rice thins are really good; I haven’t had that specific flavor, but I love the different kinds of flavors. Also, I love baked oatmeal smothered in honey and pb and fruit. Yours looks so delicious!

  3. Eats look great girl!
    I’m totally a several meals a day kind of girl. It pretty much depends on what’s going on during the day, however I do start to get super cranky during the days that I only eat 3 meals. I’m not a fan! And no one likes a cranky ginger 😉

  4. So I do like three hearty meals *with* snacks in between? Although I have a temp. job cleaning right now and I’ve been so hungry at meal times that I’ve been more like eating three hearty meals with dessert immediately after each one. It’s weird not to eat every two to three hours!
    It’s never fun when Mom & daughter are hangry at the same time. Keeping being awesome, mama!

    • Haha I feel you on the hearty meals and snacks and dessert! I’ve been so hungry with breastfeeding and I’m supposed to eat my regular calories plus 500 more…It’s hard to keep up with my hunger!

  5. YUM, baked oatmeal! At this point in my life, I’m a three hearty meals a day AND several snack kind of person. It’s what works for me for now!

  6. I love those crackers!! My favorite is the sweet potato kind. I always love your oatmeal squares. I am going to start making some of those for my meal prep! And, I have been all about veggie burgers too lately. They are so easy to heat up for a quick dinner!

    • I’ve heard everyone saying the sweet potato ones are the best–haven’t tried those yet! What veggie burgers are your favorite? I need to make more of my own veggie burgers–so easy to do!
