WIAW: Saturday Delights

Welcome to another What I ate Wednesday post where I share a full day of eating for recipe inspiration. Today’s post was captured on a typical lazy Saturday. Enjoy my Saturday Delights! 

  • Breakfast: 9:30 am

I had leftover black bean taco filling from dinner the night before, so I added some scrambled eggs to the mixture and toasted the whole thing in the oven for a breakfast taco!

I also enjoyed a cup of coffee with french vanilla almond milk creamer added… complete with two episodes of Chopped on Netflix!

  • Snack: 12:30 pm

After I got home from the grocery store, I made some pumpkin baked oatmeal to have for the week and I snacked on these grapes while cooking and putting groceries away.

  • Lunch: 1:30 pm

I picked up some sushi while I was grocery shopping to have for lunch. Aren’t these sushi plates the cutest?! I got them at Bed Bath and Beyond! This was a tuna, avocado, & cucumber roll with Tamari, ginger, & wasabi.

After the sushi, I had some herbal tea. Look at that steam in action! I had Winter Spice tea because I only have two bags left and I want to finish it now that we’re no longer in Winter season!

Snack: 4:30 pm

I felt hungry again around 4:30, so I had some of these crackers with hummus. The crackers are Breton Gluten Free herb and garlic and Breton Gluten free white bean crackers and the hummus is Tribe Everything hummus.

  • Dinner 7:30 pm

Dinner salmon

I roasted acorn squash (this acorn squash recipe is for this Friday’s Foodie Friday post, so stay tuned!) and I also made salmon and green beans to go with it. Green beans were seasoned with onion powder, Lawrys seasoning, garlic powder, and pepper. Salmon has a sriracha mayo on top.  Yum!

  • Dessert: 9:30 pm 

cashew milk ice cream

I enjoyed a small bowl of this delicious non-dairy ice cream. It is definitely my new favorite flavor and its so amazing that the Snickerdoodle cookie they use is gluten free! Cashew milk is super creamy and delicious for ice cream! (PS I hope you’ll follow me on Instagram!)

  2. Can we just rewind so I can spend your Saturday with you? I could have gone for all of this. Especially the sushi. Major sushi lover over here. Though to end the day with that ice cream is a close second (seriously – snickerdoodle? I die).
    Definitely – each post gives me inspiration and little ideas. And it’s usually the “normal” things. That’s why I like wiaw.

    • Yes please!! I love sushi too 🙂 Yes, its dairy free AND its gluten free snickerdoodles!! Yeah, I love getting new ideas for every day meals too!

  3. Yum! Everything looks delicious. I love breakfast style tacos, my husband is a very transitional eater and was really confused when I made them once. But he is always willing to try everything. And I need to try that ice cream. Snickerdoodle is one of my favorite flavors =)

    • haha really? that’s so funny! My husbands always having to eat my weird creations too! Yes, this ice cream is out of this world! and its dairy free and gluten free which is a win for me!

    • Oh yeah breakfast pizza is amazing!! There was a place near my parent’s house growing up that sold breakfast pizzas on Saturday mornings and i loved them!!! I hadn’t had sushi for a few weeks either so I was pretty pumped! 🙂
