WIAW: Welcome Fall!

Happy WIAW where I share a day of eats for healthy recipe inspiration! Today’s eats are from Tuesday where Pennsylvania began to feel some cooler fall-ish temps! Onward to the food!

Breakfast:

Pumpkin applesauce baked oatmeal with raisins & dark chocolate chips. Topped with peanut butter. Side of coffee with coconut milk creamer. Sadly, it is now totally dark when I get up for work in the morning. Sad for me waking up in the dark. Also sad for no natural lighting for photos.

Snack:

Found these pumpkin pie Larabars at CVS! It tastes like fall in a bar and it’s perfect for at my desk to hold me over until my lunch break. I also enjoyed some hot tea on the side. 

Lunch:

I had leftover sweet potato chili from the night before. I made two peas and their pods’ Slow Cooker Vegan Sweet Potato Chili and it made a good amount of leftovers. An apple and gluten free dinner roll were also on the side. 

Snack/Post Work Dessert:

A few nights before, I used a gluten free cookie mix to make a cookie cake. When I got home from work I decided to have a slice of that topped with pumpkin spice peanut butter. (yes, it’s as good as it sounds) Also had some apple cider on the side…it was a very festive snack! 

Dinner:

3 random leftover sweet potato wedges, grapes, and 2 pieces of toast with avocado hummus and topped with a fried egg. I seasoned the eggs with garlic powder, onion powder, and pepper. I also had an un-pictured glass of wine before calling it a day and heading off to sleepy land. Have a wonderful Wednesday!

  1. While I do love fall and winter the one thing I hate is waking up to the dark! I get up at about 5am most days so its typically dark out anyway, but in the fall and winter it just feels earlier. It sucks, especially now that my HIIT class at the gym starts at 5am! I have a feeling we are going to go a few weeks with less attendance lol

    • Hi Carmen, thanks for stopping by! That sounds like a delicious and easy (my favorite combo) slow cooker idea! You should definitely try those bars, theyre really good!

    • I know, its not fully dark when im going to work at 6:30 but its basically dark! Pumpkin pie is a classic! I dont love candy corn but I’ll have some if someone has it. I like it in baked goods or in a trail mix more than plain!

  2. I LOVEEEE all the pumpkin in this day of eats. You’re inspiring me to figure out how to include it at every meal! Eggs are my favorite go to weeknight dinner. I love putting them over hummus, cream cheese, or mashed avocado. Yum!

  3. Welcome Fall is RIGHT! You definitely know how to eat for fall, lady. I love a good chili as soon as it starts to be fall. I have an awesome lentil kabocha (or pumpkin or sweet potato) chili that I make. Secret ingredient….. cinnamon. And basically anything pumpkin flavored.

    • Thanks, Alyssa! Larabars are my favorite–I was very happy with the pumpkin flavor. I want to try the gingerbread one for Christmas too!
